There are alot of great books and internet sites on The Gimp. I personally have read the book Grokking the GIMP by Carey Bunks and have found it to be an excellent resource. It is becoming slightly dated because it was written with an older version of The Gimp. However, Bunks also presents many fundamental concepts to image manipulation. Each concept is backed by a complete example using The Gimp.
